The eggplant is a fruit vegetable and has a bitter, neutral taste. By sprinkling some salt on sliced eggplant and leaving it to soak for a while, you can reduce the bitterness of the fruit. Compared to other vegetables, the eggplant contains few vitamins and minerals, but it is and remains a vegetable and is therefore healthy. The neutral taste of the pulp ensures that it can be used well in all kinds of dishes and that you can season it wonderfully.

It is not recommended to eat an eggplant raw as it contains solanine, a substance that can cause stomach and intestinal problems.
